I'm writing this post in English to collaborate with a classmate's
cooking blog, which is in English.
I find his idea quite interesting. Since he's doing an Eramus exchange in Germany, he wants to spread his cooking knowledge (in fact spanish cooking). All the dishes he explains are vegetarian since he's a vegetarian.
Therefore the dishes I explain in English are going to be vegetarian as well.
Pumpkin is a typical autumn fruit with a nice orange colour and a sweet flavour, that's why it can be used for main dishes as well as for desserts (well known Halloween stuff :) ).
So... let's begin.
Ingredients (4-6 portions):
- 2 medium-size potatoes
- 1/2 kg pumpkin
- 1 onion
- vegetable stock
- salt
- pepper
- parsley
Prepare the meal:
Dice the pumpkin, potatoes and onion. Add a pinch of salt. Fry them lightly until the onion becomes transparent. Add a pinch of pepper and the vegetable stock until the vegetables are almost covered by it. Let it slow cook around 40 minutes.
When the vegetables are well cooked mash them with a mixer.
Decorate it with parsley and dish it up.
